Guest Chef Lineup for Wine & Swine

The 2019 Wine & Swine Festival will be held Sunday, May 19 from 3-6PM at Wine Country Bistro, 4800 Line Avenue in Shreveport. The wildly popular festival, now in its 11th year, delivers delicious porcine creations to enjoy while sipping newly discovered vintages and much more.

This year will host a lineup of over 60 wines to sample along with some great local beers. Chef Jason Brady will prepare local whole hogs for the buffet alongside a variety of sauces, savory and sweet, inspired by flavors from Louisiana to the Orient. And while the main event is undoubtedly the swine, Jason gives more than a passing thought to his Southern barbeque-inspired side dishes to round out the meal, including Great Raft Brined and Smoked Chicken, and Miso Grilled Salmon.

In addition to the full Southern spreads there will be some tasty bites from special guest chefs of the afternoon, Josh Harmon (Eater Chef of the Year 2017), Peter Barlow from Niteshade Chef Collaborative, and Dustie Latioles from Cochon Cannery and recently recovering from a strong showing at Hogs for the Cause! Working in collaboration with these chef superstars are local culinary masters Jacob Mouser (Franks Pizza and 2018 Golden Fork Winner) and Eleazar Mondragon (Ki’ Mexico and 2017 Golden Fork Winner)

Live Music will be rocking from TD McMurray and Easy Money.

Each guest receives a limited edition Wine & Swine t-shirt with a unique design introduced each year, and a collector’s edition etched Riedel wine glass with the Wine & Swine logo.

Joshua Harmon is a 2017 Eater chef of the year and taste maker rising star nominee. He was also named one of 17 chefs to look out for in the US by zagat. Born in Tennessee, raised in Texas and California highschool graduate. Harmon has been exposed to a variety of cultures that have led to his “progressive American” cuisine. He trained and staged at such New York restaurants as David Burkes’ Townhouse, Buddhakan and Le Cirque. Dallas includes time at Steven Pyles James Beard nominated restaurant as well as Petra and the beast by Misti Norris. Josh also opened a critically acclaimed restaurant in deep ellum called Junction, where he won a slew of notional awards. He has since opened a sandwich shop called Butlers Cabinet and is now running the food program at long time Dallas institute The Belmont Hotel.

Peter Barlow resides in Dallas, Texas. Formally from 5 star restaurant Stephan Pyles Flora Street Cafe since 2016. He’s From from Chattanooga, Tennessee, where he was most recently Chef de Cuisine at Easy Bistro and Bar for Erik Niel, who was a semifinalist for a James Beard in 2016, and 2017. In the midst of his five years with Easy Bistro, Peter took a year off to stage across the country with top chefs and restaurants including Douglas Keene (2 Michelin Star Chef) at Cyrus Restaurant; Chefs Jon Shook and Vinny Dotolo of Animal; Chef Ludo Lefebvre at Trois Mec; and then as a Commis Chef for a year for Curtis Duffy (3 Michelin Star Chef) at Grace in Chicago. Shortly thereafter he spent time with Chef John Shields (Charlie Trotter’s/Alinea/Smyth) at Riverstead Inn in Virginia. Peter was the opening Chef De Cuisine at Flora Street which has remained as the only 5 star restaurant in Dallas as well as a James Beard Nomination for best new restaurant 2017! Among many other accolades in Dallas, Chef Peter has been nominated multiple times as best new chef and rising star chef of the year in Texas by many local publishers. In 2018 he formed Niteshade Chef Collaborative to bring events to food and wine  festivals, socialite parties, nationwide personal chef and restaurant consulting services.

Dustie Latiolais, @cochon.cannery, @dustie.latiolais, a long-time friend and culinary Cajun rockstar has gone all in on his new venture Cochon Cannery in Breaux Bridge, LA that sells the famed Bacon Jam and a whole bacon lineup.
